Champagne Collet celebrated at Artistry on the Green

Fifty guests celebrated the season with Inn owner, Trisha Perez Kennealy, at a Champagne and cuisine pairing dinner featuring legendary winery, Champagne Collet, of Ay, France.
Artistry on the Green’s Executive Chef, Stacy Cogswell, explored bold, innovative pairings with six different varietals of Champagne Collet, each with its own unique flavor profile complementing such dishes as Marbled Foie Torchon with Ancho-Dark Chocolate Vinaigrette, Brioche, Cocoa Nibs and Cherry;
Oysters with Avocado Sorbet and Pickled Poblano; Bone Marrow Custard with Salt & Vinegar Chips, Honeyed Braised Beef Marmalade and Crispy Shallots; Long Island Duck with Chestnut Puree, Chanterelle Mushrooms and Meyer Lemon; and and Pineapple Tart Tatin with Passion Fruit Caramel.
We were thrilled to have Pascal Boye, Vice President of Champagne Collet, with us for the evening. Boye mingled with guests and educated them about the wines through each course of the decadent meal.
